While Slovenian cuisine has strong meat traditions, it also offers a wealth of naturally vegetarian and vegan dishes. Many traditional recipes are plant-based by heritage, not by trend.
Ajdovi zganci (buckwheat spoonbread), various struklji fillings, bean-based stews, and seasonal vegetable dishes have always been part of the culinary repertoire. The country's excellent dairy tradition also provides vegetarian options like Tolminc cheese and fresh cottage cheese (skuta).
Ljubljana and Maribor have thriving vegan scenes, with dedicated restaurants and cafes offering creative plant-based interpretations of traditional dishes.
